A Snack That Won't Leave You Sluggish

Hummus infused with sun-dried tomatoes and sunflower seeds, accompanied by toast dippers and apple slices.

Trentemøller's aquatic beats coursed through my speakers, as the sun streamed through my windows that crisp December afternoon. Hunger roared in my belly, catalyzing me into snack-creation mode.

But I didn't want just any snack. I wanted a snack that was clean and light, with a spectrum of flavors. 

What you see in the photo is what I ultimately concocted. It looks delicious doesn't it?

To make this your afternoon snack, you'll need:

4 Tbsp plain hummus*
3 Tbsp sunflower seeds
1 tsp Zahatar seasoning
2 tsp sun-dried tomatoes
1 tsp olive oil, optional

1 slice of toast
1 apple, sliced

Mix the hummus, seeds, tomatoes and seasoning into a small bowl with a spoon. The consistency will be a bit thick like crunchy peanut butter. If you want something smoother, add a teaspoon of olive oil.

Take a piece of whole wheat toast and place it in the toaster. After it is lightly browned, slice it into six rectangles.

Slice a sweet apple into slivers. These are intended for individual consumption, although one might taste good dipped in the hummus.

Spread the hummus on the toast. Place it in your mouth or hand it to a close friend. Bon appétit.

*You can make this by blending a can of garbanzo beans in a food processor.
