Grilled Peaches & Grilled Summer Squash Top Off Dad's Day BBQs


Contra Costa Certified Farmers Markets offers up two recipes --one for grilled peaches and one for grilled summer squash -- that will be perfect accompaniments to your Father's Day barbecues.


Grilled Peaches or Nectarines with honey cheese

4 peaches or nectarines cut in half with pits removed
2 Tblsp olive oil
1 cup mascarpone cheese
1 Tblsp. Honey

In a small bowl mix mascarpone cheese and honey and whip together.

Brush the cut side of the fruit with the olive oil on the hot grill and brush the skin side before turning. Grill each side for 2 minutes and remove.

Serve – On a plate place the grilled fruit cut side up and fill with a dollop of the mascarpone. 

Serves 8


GRILLED SUMMER SQUASH 


A great way to enjoy summer squash is grilling and using a variety of squash to compare the flavors of each.


Be sure your grill surface is clean and the temperature is hot and set at medium heat.

3lbs of assorted summer squash cut down the center in half
3Tsp chopped garlic
3Tsp olive oil
Salt to taste with sea or kosher salt
1Tsp balsamic vinegar

In a large bowl toss the squash with the olive oil, garlic and salt.
Grill on medium heat for 5 to 10 minutes on each side until soft with grill marks. 
Remove from heat and let cool to handle and slice into serving pieces.
Place on a platter and sprinkle with balsamic vinegar and salt.


Serves 6-8
